The headline of an article in today’s Food Navigator, “Consumers Demand Guilt-Free Indulgence,” caught my eye. The article cited a Datamonitor.com study that found that
consumers are unwilling to sacrifice taste and pleasure for “nutritional goodness” and suggested that healthy foods also need to taste good. Here is the challenge as I see it: By nature of their high fat, sugar, and/or salt content, “indulgent” foods taste really good. Healthy, natural foods have a more subtle flavor. A healthy way of eating can include both — plenty of healthy foods and a small portion of indulgence. Personally, I like chocolate, and I eat half a handful of chocolate chips every day.
